Growing up in New Jersey, we had a amazing marketplace called Delicious Orchards. It was all things Apple - Pies, Cinnamon Covered Donuts, Candied/Caramel Versions, and All Natural Apple Sauce with Cinnamon. So, for our second Hard Cider, we strived to find nostalgia in a bottle and create the “Baked Apple Pie of Ciders” aka Cinn-delicious. Having made our first cider, Headbanger, we knew barrel fermentation gave us the texture and baked character we were looking for. Rather than add a cinnamon liquor or extract, we decided to ferment and age the cider with all natural cinnamon sticks that were changed twice during the process.  Fermentation took 15 days to become completely dry and the cider was racked to a clean barrels then aged with new sticks for another 30 days. The lots were then carbonated, kegged, and bottled unfined and unfiltered.

If you love all natural, no sugar added, Apple Sauce with a touch cinnamon, this is your Cider. It is a straight forward Cinnamon infused Cider that has bright flavors, complete with elegant bubbles leading to a warm, dry finish.   Type your paragraph here.

Our first Hard Cider reflects a 14 year experience making award winning wines. We started with all natural apple juice at 13 Brix inoculating the fermentation in 60 gallon French Oak Barrels. We used a yeast normally used for our Fume/Sauvignon Blanc. Fermentation took 15 days to become completely dry and the cider was racked to a clean barrels. Headbanger American Gold Whiskey was added to the cider and aged for another 30 days. The lots were carbonated, kegged, and bottled unfined and unfiltered.

The vanilla, caramel, and cinnamon flavors from the whiskey add the components enabling us to call this, “The Caramel Apple of Ciders.” Dry to the finish, the texture reminds us of an Italian Prosecco that is clean, refreshing, and leaves you wanting another sip. Headbanger Hard Cider, Arizona, USA
